8 CUPS WHOLE WHEAT FLOUR
7 CUPS HOT WATER
1/2 CUP OLIVE OIL
3/4 CUP HONEY
3 T SALT
3 CUPS BREAD FLOUR
2/3 CUP GLUTEN
4 T INSTANT YEAST
7 CUPS WHOLE WHEAT FLOUR
Put in first amount of flour into your bowl. Add HOT tap water, oil, honey, and salt. Mix well. Add gluten and bread flour and mix thoroughly. Then sprinkle yeast on top and mix in thoroughly. Add remaining flour. Add wheat flour until dough cleans the sides of the bowl. (Remember too much flour will make the bread dry)
Knead dough until dough looks and feels elastically (good used bubble gum). Let rise about 10 min.
I use Crisco on my hands when I separate the dough and place it into pans.
However I usually spray the pans with PAM. Separate into loaves. Let rise approximately 30 min. or until doubled. (You'll just have judge this for
yourself)
Bake at 350 degrees for 35 minutes.
DID YOU KNOW? THAT 50# OF WHEAT MAKES 60 LOAVES OF BREAD!!

4 CUPS FLOUR (3 CUPS WHOLE WHEAT/1CUP WHITE)
1.5- 2 CUPS WARM WATER
1/4 teaspoon BAKING POWDER
1 teaspoon SALT
1/4 CUP COOKING OIL
Mix all ingredients together, knead for abt. 5 min. Your dough should be easy to handle not too stiff or too soft.(sort of like play dough)
Separate into balls. Let balls sit for 10 min. to rest. Roll out on a floured surface. Flipping often to get that round shape.
Heat your griddle to 375-400 degrees. I use my Teflon pancake griddle.
(That way I don't have to use any oil or grease when I cook the
tortillas) Cook until the bottom is warmed, turn and repeat. If you cook your tortilla too long it will not "wrap"
